“It seems to me that our three basic needs, for food and security and love are so mixed and mingled and entwined that we cannot straightly think of one without the others. So it happens that when I write of hunger, I am really writing about love and the hunger for it, and warmth and the love of it and the hunger for it… and then the warmth and richness and fine reality of hunger satisfied… and it is all one.” M.F.K. Fisher, The Gastronomical Me

For many years I have written a ‘to do list’ of goals and aspirations at the back of each new notebook I start. Ambitions such as ‘work in a michelin starred restaurant’, ‘live and work in New york’, ‘fill 2 new sketchbooks’, ‘be debt free’, ‘learn french’ and ‘write a blog’. Some of those dreams and ambitions have been achieved. I am writing from my new apartment in west harlem, NY about to start work in the michelin starred Gramercy Tavern having worked for Gordon Ramsay’s 1 star restaurant Petrus for the past 2 years.  Some of those goals have, however been transferred from notebook to notebook, year upon year. With this blog I hope to cross one more from that list.

As a pastry chef with a (more than) healthy appetite food plays a central role in my life; in my thoughts, in my reading and in my actions. My favourite books are about food, my favourite films revolve around the table and the kitchen, some of my favourite moments have been by the stove, glass in hand and friends by my side. Food is (excuse the pun) at the core in my life. This blog will have food as its subject but hopefully as MFK Fisher suggests, by writing about food I can write about life and all that that encompasses.

…….i’ll save learning french for next year
